Ingredients :

250g Flour
25g Butter
¼ cup Oil
½ t.spn Salt
 Water to Knead

Method :

Add the Butter, Oil, and salt and knead the dough nice and soft.
Add more water if required

Potato Filling

Ingredients :

200g boiled potato
½ t.spn Ginger
A pinch of saffron
1 t.spn chili pieces
½ t.spn Salt
1 tbl.spn Oil
4 – 5 t.spn Edinboroug Thousand Island

Method :

Pour the oil in a pan, and add the ginger and start stir frying.
Add the boiled potato and the rest of the ingredients and leave it in the hob for 2 – 3 minutes and cool it.
Roll the roti mix and thin into a sphere
Spread the potato filling in the middle and spread the Edingborough Thousand Island dressing on top.
Fold the roti into a rectangle shape, and cook it in a greased roti pan on both sides.

Serve it HOT HOT…….
